Pineapple and sweet potato pudding


INGREDIENTS

  • 500 g of sweet potato
  • 1 pineapple
  • 500 ml of milk
  • 100 g of sugar
  • 1 tea spoon of vanilla extract
  • 2 table spoons of corn flour
  • Finely chopped little amount of cashew
  • Finely chopped little amount of dates
METHOD
  • Boil and grind the sweet potatoes
  • Peel off the pineapple ,finely chop and steam it a little
  • Add corn flour and eggs to a container & whisk it
  • After whisking add pineapple and sweet potato to the mixture and mix them well
  • Add little amount of butter / oil to the bottom of a tray and spread it
  • Pour the mixture to the tray and bake it for about 15 minutes
  • After baked sprinkle the cashew and chopped dates & taste it with your loved ones
